MY ONE POT PASTA RECIPE

I love to cook, and I’m always looking for recipes that I could try out, but there are those days that I’m too tired even to contemplate cooking a complicated meal. The thought of it makes me exhausted. My go-to meal when I have such days is a one-pot pasta. The meal is a testament to its name; you put everything in one pot. It’s an easy meal for those days you are too busy or too lazy to cook but want something delicious


Ingredients

§ ½ packet of spaghetti

§ Eight cherry tomatoes halved. Alternatively, you can use two large tomatoes cubed(large cubes)

§ One white onion thinly sliced

§ Four cloves of garlic, thinly sliced

§ ½ red paper flakes

§ Two sprigs fresh basil or store-bought dried basil, though fresh basil tests better.

§ Two teaspoons extra virgin olive oil

§ Salt and black pepper to taste

§ 21/2 cups of water

§ Parmesan cheese or mozzarella cheese balls for serving

Combine the spaghetti, tomatoes, onion, garlic, red pepper flakes, basil, oil, salt, and black pepper and water in a large straight side skillet or pot. Bring to boil over high heat and stir and turn the mixture frequently with tongs, until the spaghetti is aldente(cooked as not to be soft, has a bite to it) and water has nearly evaporated about 9 minutes.

Season with salt and pepper, serve it in a bowl, garnish with fresh basil and grated cheddar or mozzarella cheese balls. I know mozzarella cheese balls for a one-pot pasta sounds crazy, but it’s quite delicious if you try it.
